Primary Purpose:


Chef-Culinary Trainer develops and delivers a system of culinary skills training and coaching for food service employees on all aspects of their job as it relates to food production and food safety to ensure quality food production at all sites. Coordinate culinary programs and school pilot projects for the Child Nutrition Department and Culinary Arts program.

ESSENTIAL DUTIES AND RESPONSIBILITIES:

  • Develop and administer programs for Culinary Skills Training and kitchen basics for all campuses. Develop and revise face-to-face and virtual professional development material and presentations.
  • Develop and deliver on the job training and coaching to ensure quality food production for new hires and current employees.
  • Administer Serve Safe Food Safety and/or Food Handler Training regularly for all department staff.
  • Observe employee engages in preparing and portioning food to ensure that methods of cooking and size portions follow the most current copy of the standardized recipe.
  • Assist and support campus Managers with day-to-day operations and coaching. Deliver timely feedback and suggestions to respective, campus managers and employees when observing issues not consistent with standard operating procedures.
  • Support Food Services Department efforts to produce the highest quality products consistently across all locations.
  • Compile, maintain and secure all physical and electronic reports, records and other required employee certifications detailed and accurate reports.
  • Investigate and resolve issues related to food quality complaints.
  • Coordinate various projects with district student culinary programs and school culinary teachers as directed by the Director of Child Nutrition.
  • Develop culinary skills training material and institutional cooking methods to create and deliver a comprehensive training program for campus staff.
  • Provide culinary training and ongoing coaching to schools selected for pilot projects to ensure success.
  • Coordinate with the Director to develop, test and modify standardized recipes for schools.
  • Coordinate the organization and inventory of food and supplies of test kitchens where recipe testing is conducted.
  • Create "signature" chef inspired recipes for school menus and programs in food service software.
  • Investigate and provide recommendations on issues related to food quality complaints and ensure follow-up on corrective actions.
  • Coordinate vendor food samples and food inventory of student taste testing samples
  • Coordinate food preparation for catering and other functions as needed.
  • Ensure food safety in school kitchens, test kitchens and central kitchens.
  • Coordinate performance measures for evaluating food acceptability and customer satisfaction.
  • Perform all other tasks and duties as assigned.
