We are currently seeking a Chef De Partie to join our talented team of chefs at the Hilton Dublin Kilmainham
This position will require flexibility to work varied shifts.
Purpose of job: To take charge of sections in all kitchen areas and to ensure the smooth running of the outlet, assisting other outlets when required. To provide assistance for the Head Chef and Sous chef in maintaining high standards of food preparation, presentation and hygiene.
Main Duties:
- Prepare mis-en-place for all relevant menus.
- Prepare, cook and present food to hotel standards, including staff meals.
- To take responsibility for a section in the kitchen as instructed by the Head Chef / Sous Chef.
- Ensure correct portion control as instructed by Head Chef.
- Prepare all dishes as instructed by Head Chef and Sous Chef.
- To operate and clean equipment correctly and safely adhering to cleaning and maintenance schedules.
- Ensure work areas are kept clean, safe and tidy at all times.
- Supervise assistant chefs and assist in their training.
- Control the security of company's stock and property.
- Adhere to all regulations in respect of Health and Safety, hygiene, guest safety, fire regulations, emergency procedures, etc (including correct recording of all temperatures and that all necessary food samples are taken).
- To carry out all instructions given by Head Chef/Sous Chef
- Adhere to all regulations in respect of hotel policies and standards, i.e. mandates and food standards.
- To comply with any reasonable request by the Head Chef, supervisor or Management.
- All staff of the company are required to make themselves available for training and communication meetings for which advance notice will normally be given.
The ideal candidate will:
- Have previous experience as a Chef De Partie in a 4* or 5* hotel
- Have previous experience in a busy kitchen
- Strong communication and organisational skills are a must as this is a busy, dynamic role.
- Candidates must be flexible to work varying shifts, including weekends, evenings and on occasion early mornings.
- Be legally entitled to work full-time in Ireland
- Previous pastry experience would be an advantage
