POSITION SUMMARY
The executive pastry chef works closely with Executive Chef and Partners to create a well balanced, fiscally responsible, delicious and attractive baking and pastry program for a small restaurant group. The team is small and focused on sophisticated cuisine. The restaurant menu changes daily which allows for evolution with fresh and local produce. Our company has a large focus on quality of life with a 5 day work week and positive outlook on work, life and hospitality.

-Retail Breakfast pastries, tarts, cakes, entremets and cookies

-Plated Desserts

-Tasting Menu Elements

-Recipe Development

-Team Management

Qualified Candidates will possess/do the following:

  • Five or more years in a leadership role in a from scratch kitchen
  • Broad baking and pastry skillset with Michelin Guide level execution.
  • Strict recipe adherence
  • Developed palette, ability to use all senses to determine errors in execution and production
  • Ability to teach, coach and mentor staff members with limited experience to execute high level cuisine
  • Ability to adapt to any number of unexpected dietary restrictions
  • Strong production skills
  • Ordering, receiving, inventory control
  • Cost Controlling, labor, food, repairs etc.
  • Ability to maintain a positive attitude with long & stressful shifts
  • Ability to maintain strong front of house and back of house relations
  • Enforcing best practices for safety and sanitation in the kitchen.
  • Creating new recipes to regularly update the menu, with chef input
  • Incorporating feedback from restaurant staff and patrons to make improvements or resolve issues.
  • Increase guest satisfaction through superior food quality standards.
  • Monitor daily labor reports and eliminate overtime.
  • A culinary pedigree of classic fine-dining European cuisine
  • Passion for creating incredible food that delights and attracts guests.
  • Creative and innovative thinking.
  • Available to work over weekends and on holidays. Position requires to work on the line and be able to work in a standing position for long periods of time and be able to lift up to 50 pounds.

Qualifications

  • A minimum of 5 years progressive experience
  • Experience in a similar environment
  • Self starter, flexible, and able to work independently
  • Ability to multitask, and change priorities constantly as needed in a fast paced environment
  • Ability to conduct written and verbal performance reviews
  • Strong business acumen
  • Must possess excellent verbal and written communication skills
  • Exceptional organizational skills
  • Post-secondary Degree/Diploma in Hospitality Management, Food and Beverage Management and/or equivalent an asset
