Summary: Executive Pastry Chef provides training, coaching, mentorship, motivation, and direction to the CCCR pastry team, continually striving to develop colleagues in all areas of pastry/bakery skills. Produce and manages all pastry, desserts and bakery products for all property outlets, banquets and venues to ensure the highest level of quality and consistency is maintained through tested recipes and inspection of goods.

Essential Duties and Responsibilities include the following. Other duties may be assigned.

  • Produce eye-catching pastries and desserts with creativity and artistic ability.
  • Develop and execute all recipes and standardize through photos and written procedures.
  • Participate, collaborate in menu development and execution in restaurant venues.
  • Manage all administrative duties for the pastry shop staff.
  • Manage sanitation and safety procedures to accepted standard.
  • Maintain physical plant through proactive preventative maintenance program.
  • Train and educate staff to provide bench strength and development path for promotion.
  • Manage food purchases to budgeted numbers.
  • Manage all transfers and production lists daily.
  • Manage labor costs to budget.
  • Manage other expenses to budget.
  • Attend meetings as scheduled.
  • Expert knowledge of kitchen hygiene and food safety.
  • Must possess a high stamina level, have expert communication, management, and supervising skills, and be able to manage time effectively.
  • Promote Cache Creek Casino Resort in a positive manner.

Supervisory Responsibilities: Responsible for the overall direction, coordination, and evaluation of the pastry department. Carries out supervisory responsibilities in accordance with the organization's policies and applicable laws. Responsibilities include interviewing, hiring, and training employees; planning, assigning, and directing work; appraising performance; rewarding and disciplining employees; addressing complaints and resolving problems.

Qualifications: To perform this job successfully, an individual must be able to perform each essential duty satisfactorily with or without reasonable accommodations. The requirements listed below are representative of the knowledge, skill, and/or ability required.

Education and/or Experience: Two years’ experience as an Executive Pastry Chef in a mid to high volume, multi-outlet hotel/resort/casino with centralized pastry production kitchen. Previous work in all decorative medias such as sugar, pastry, etc. Management training class. Minimum 3 Five Star – Five Diamond Property Experience in similar role. Trained or has taken classes under MOF (Meilleur Ouvrier de France) guidelines or teacher equivalent.

Age Requirement: Must be at least 21 years of age.

Language Skills: Ability to read, analyze, and interpret general business periodicals, professional journals, technical procedures, or governmental regulations. Ability to draft reports, business correspondence, and procedure manuals. Ability to effectively present information and respond to questions from groups of managers, clients, customers, and the general public.

Mathematical Skills: Ability to calculate figures and amounts such as discounts, interest, commissions, proportions, percentages, area, circumference, and volume. Ability to apply concepts of basic algebra and geometry.

Reasoning Ability: Ability to apply common sense understanding to carry out instructions furnished in written, oral, or diagram form. Ability to deal with problems involving several concrete variables in standardized situations.

Certificates, Licenses, Registrations: Cache Creek Casino Resort Tribal Gaming License. Sanitation Certificate ACF or equivalent Competition Medals

Physical Demands: While performing the duties of this job, the employee is regularly required to stand; walk; use hands to finger, handle, or feel; reach with hands and arms; talk or hear and taste or smell. The employee is occasionally required to sit; climb or balance and stoop, kneel, crouch, or crawl. The employee must regularly lift and/or move up to 100 pounds and occasionally lift and/or move more than 100 pounds. Specific vision abilities required by this job include close vision, distance vision, color vision, peripheral vision, depth perception and ability to adjust focus.

Work Environment: While performing the duties of this job, the employee is frequently exposed to wet and/or humid conditions; moving mechanical parts; fumes or airborne particles; extreme cold; extreme heat and secondhand tobacco smoke. The noise level in the work environment is usually loud.
