SCOPE:
This position will report directly to the Supervisor and be responsible for mixing ingredients specific to recipe and run dough through dies and into oven processes.
ESSENTIAL FUNCTIONS/ROLE AND RESPONSIBILITIES:
- Follow company GMP’s (Good Manufacturing Practices)
- Maintain and work in a safe environment
- Know how to start up and shut down the lines
- Recognize the different dough textures
- Keep hoppers filled with proper amount of dough
- Properly measure the minor ingredients by performing catch samples
- Check dough temperature
- Good Housekeeping in bakery
- Check the flour sifter each shift
- Check all drives, cookers, salters, ovens, dryers, discharge, and proofing conveyors to ensure they are properly operating and set to correct settings
- Document cuts per minute as required
- Check and record caustic every 30 minutes record on BakerQC
- Check wet weights/length every 30 minutes record on BakerQC
- Make inventory moves in Epicor
- Record all ingredient lot numbers
- Keep salter full with the correct level
- Notify leads, QA, and packers of any bad product and how long it will last
- Communicate with immediate supervisor if any problems arise
- Follow all safety and rules and policies
- Follow all general work rules and policies
- Regular attendance
- Able to follow directions as required by management
- All other duties assigned by supervisor and/or management
IN THE EVENT OF AN ABSENCE:
Another experienced team member will proceed with doing the essential functions of the job.
QUALIFICATIONS AND EDUCATION REQUIREMENTS:
- High School diploma or GED
- One-month related experience or training
- Ability to read and comprehend simple instructions
- Ability to effectively present information to other team members of the organization
- Ability to add, subtract, multiply, and divide in all units of measure, using whole numbers, and decimals.
- Ability to apply common sense understanding to carry out detailed written or oral instructions.
- Ability to deal with problems and find solutions in real time
PREFERRED SKILLS:
- Ability to identify defects in product for quality purpose
- Ability to communicate with coworkers and management to better the operation

While performing the duties of this job, the team member must be in good physical condition to perform the tasks assigned. The team member must lift, carry or move up to 50 pounds. The team member is required to stand, walk, climb, bend, twist and reach with both hands and arms. The team member must be able to demonstrate agility of both hands and all fingers to push, pull, grasp, touch and feel. The team member must be able to lift with both hands and lift overhead with both hands. The team member must demonstrate good visual acuity and hand/eye coordination. Must be able to talk/communicate and hear.
Work environment conditions may require/recommended the use of safety equipment to include but not limited to; eye safety glasses, side shields, steel toe or composite toe shoes, hearing protection and hair/beard nets.
