As the Research & Development Chef, you will play an integral part in creating and developing new menu recipe concepts and reworking existing recipes for The Cheesecake Factory and Grand Lux Cafe concepts. You'll also assist with the presentations of food “sensitivity” and continuing culinary educational training programs for our Field Culinary team.
Reporting to the Vice President, Culinary Development, you will work with a team of 13 at The Cheesecake Factory corporate support enter in Calabasas Hills, CA, supporting the research and development for a global $3.3 billion public company with over 300 full-service restaurants and more than 47,500 staff members.

Responsibilities
Here’s more of what you’ll get to do:
- Create unique, creative, and world-class new menu recipes so that the highest levels of food quality consistency can be achieved under high volume production conditions.
- Identify and establish the critical culinary components within the menu that help to maintain the highest food quality standards for The Cheesecake Factory and the Grand Lux Cafe on a continuous basis.
- Balance exceptional culinary creativity with real-world conditions and operational needs for a high volume, complex restaurant concept.
- Rework existing recipes for improved food quality, increased guest satisfaction and operational efficiencies.
- Conduct yield and performance analysis tests for all new and current ingredients under review.
- Assist with Culinary Center training, organizing and presenting training activities and other special Culinary Center events throughout the year.
- Appreciate the importance of continuing education and the need for on-going research in order to find answers to critical questions within the culinary arts and the field of hospitality.
- Culinary “Road Trips” throughout the country several times a year researching and experiencing the cuisines of celebrated chefs from targeted restaurants.
- Understand and leverage global trends to add value to our menu development process.
- Utilize classical and contemporary cooking techniques to achieve the desired end-in-mind quality profile for all new recipes being developed.
Qualifications
What we require:
- 2+ years of experience within upscale casual dining and high-volume restaurant environments.
- 1+ years of experience as a Research & Development chef creating new menu items.
- Understanding of both casual dining and high-end food quality standards including, flavor profiles, presentation highlights and service requirements.
- Advanced culinary skills: proper knife handling and general kitchen equipment use.
- Superior ability to taste flavors and understand basic food science.
- Knowledge of HAACP and proper sanitation procedures.
- Strong communication skills - both verbal and written.
- Proficient in Microsoft Office (i.e. Word, Excel, Power Point and Outlook).
- Advanced mathematical skills.
- Average typing skills.
- Ability to work on multiple projects.
- Knowledge of workplace safety procedures.
