Position Purpose:
Train, supervise and actively participate in all the food productions areas of the kitchen, mainly in the outlets, in order to maintain Hilton's high standards of quality.
Essential Functions:
· Hire, train, and supervise the line cooks involved in preparing, cooking, and presenting of food.
· Oversee all aspects of restaurant service; every meal period and manage shift transitions of AM/PM shifts.
· Visually inspects, selects and uses only the freshest fruits, vegetables, meats, fish and other food products of the highest standard in the preparation of all menu items. Reads and employs math skills for following recipes. Prepares requisitions for supplies and food items for production in workstation.
· Monitors to ensure proper receiving, storage (including temperature-setting) and rotation of food products so as to comply with Health Department regulations, including coverage, labeling, dating, and placing items in proper containers to ensure product freshness.
· Assigns in detail, specific duties to all employees under supervision of Restaurant Chef for efficient operation of kitchen and service.
· Writes, maintains and updates all menu specifications, recipes and pictures, production forecasts, and ensures same are being followed.
· Checks to see that all equipment in the kitchen is clean and in proper working condition and write work tickets for any equipment in need of repair.
· Observes production flow and makes adjustments in order to adhere to control procedures for cost and quality.
· Schedules culinary staff so that proper coverage is maintained while keeping payroll costs in line, making necessary adjustments for business levels.
· Provide menu item ideas and feedback to maximize revenue potential.
Supportive Functions:
In addition to performance of the essential functions, this position may be required to perform a combination of the following supportive functions, with the percentage of time performing each function to be solely determined by the supervisor based upon the particular requirements of the hotel.
· Performs other duties as required, i.e. special orders, buffet presentation, V.I.P. parties, writing specialty menus for promotions, holidays, etc.
· Supervises daily cleaning, inventorying of walk-in and reach-in boxes, floors and hallways.
· Communicates and assists the Executive Chef in creating innovative products.
Specific Job Knowledge, Skill and Ability:
The individual must possess the following knowledge, skills and abilities and be able to explain and demonstrate that he or she can perform the essential functions of the job, with or without reasonable accommodation, using some other combination of skills and abilities.
· Thorough working knowledge of hot and cold food preparation.
· Good working knowledge of accepted sanitation standards and Health Codes for the state of Florida.
· Extensive skill in usage of slicers, mixers, grinders, food processors, etc.
· Basic mathematical skills necessary to understand recipes, measurements, requisition amounts and portion sizes.
· Ability to read, write and understand the English language in order to complete requisitions, read recipes and communicate with other employees and managers.
· Sufficient manual dexterity of hand in order to use all kitchen equipment, i.e. knives, spoons, spatulas, tongs, slicers, etc.
· Ability to grasp, lift overhead and/or carry 50lbs maximum, or otherwise, move or push goods on a handcart/truck weighing a maximum of 350 lbs. on a continuous schedule.
· Ability to perform duties in confined spaces.
· Ability to perform duties within extreme temperature ranges and to stand for long periods of time, up to and over eight hours.
Qualification Standards:
Education:
Any combination of education and experience equivalent to graduation from High School or any other combination of education, training or experience that provides the required knowledge, skills and abilities. High school diploma. Culinary or Apprenticeship Program preferred.
Experience:
Minimum of two years’ experience as a Restaurant Chef in a similar size operation.
Licenses or certificates:
Ability to obtain any government required license or certificate.
Grooming:
All employees must maintain a neat, clean and well-groomed appearance (specific standards available).
Other:
Regular attendance in accordance with hotel standards, which may be changed by the Hilton at any time, is essential to successful performance of this position. Employees with irregular attendance, excused or unexcused, will be subject to disciplinary action, up to and including termination of employment.
Due to the seasonal and business nature of the hospitality industry, employees may be required to work varying schedules and hours to reflect the staffing needs of the hotel.
