As the Senior Sous Chef, you would be responsible for food planning, preparation, production, and control for all food outlets and banquet facilities. Specifically, you would be responsible for performing the following tasks to the highest standards:
Job Summary
As the Senior Sous Chef, you would be responsible to oversee kitchen operations and select, train, appraise, discipline and coordinate kitchen staff in order to prepare, cook and present food according to the hotel's standard recipes in the continuing effort to deliver outstanding guest service and financial profitability. Specifically, you would be responsible for performing the following tasks to the highest standards:

Responsibilities
- Interviews, selects, trains, appraises, schedules, disciplines and supervises kitchen staff in kitchen during the cooking of food items.
- Supervises kitchen staff in the proper preparation, cooking and garnishment of various menu items.
- Assists in the development and enforcement of policies to control food cost and quality.
- Ensures proper receiving, storage (including temperature-setting) and rotation of food products so as to comply with Health Department regulations.
- Leads menu planning activities.
- Schedules culinary staff so that proper coverage is maintained while keeping payroll costs in line.
