JOB DESCRIPTION
Job Title: Sushi Chef de Partie
Department: Culinary
Reports To: Culinary Supervisor
FLSA Status: Non-Exempt
Approved By: Director of Culinary Operations/Executive Chef
Summary:
Prepares sushi and sauces primarily in front of members and guests. Assumes the responsibility for the proper sanitation and food handling for raw fish and other sushi items and dishes.
Essential Duties & Responsibilities:
- Ensures workstation is clean and sanitary.
- Assists with menu and creating signature dishes.
- Greets and serves members in an efficient and friendly manner. Resolves any issues or concerns.
- Properly handles ready to eat food that is served raw.
- Handles, stores, labels, and rotates foods properly and in accordance with public health safety, state, and local laws.
- Breaks down and cleans workstation at the end of service.
- Conforms with and abides by all regulations, policies, work procedures, and instructions.
- Communicates with members, co-workers, management, staff, and the general public in a courteous and professional manner.
- Exhibits and maintains a professional demeanor and grooming standards to reflect a positive image of The Club at Admirals Cove.
- Performs other duties as assigned by the Culinary Supervisor, Sous Chef, and Chef de Cuisine.
Knowledge, Skills, and Abilities:
- Ability to make sushi rolls while displaying creativity and good plate presentations.
- Basic knife skills required.
- Requires solid understanding of food preparation.
- Ability to stand in one place for extended periods of time.
- Ability to interact professionally and maintain effective working relationships with superiors, co-workers, and members.
- Must be able to multi-task and work in a fast-paced environment.
Supervisory Responsibilities:
Mentorship of Commis Cook and serves as an example of professionalism.

Education and/or Experience:
High school diploma or general education degree (GED); and a minimum of 2 years related experience or training; or equivalent combination of education and experience. Previous sushi cook experience is required.
Language Skills:
Ability to communicate well in English. Ability to write simple correspondence. Ability to read and comprehend simple instructions or short correspondence.
Computer Skills:
No computer skills required for this position.
Certificates, Licenses, Registrations:
Serve Safe Food Handlers Certificate.
