D'Avolio, with its roots from Buffalo, New York, is now opening a location in Henderson, NV. D'Avolio began in 2010 as a purveyor of fine olive oils and vinegars, and expanded in 2012 with a food menu. We serve gourmet pizzas, sandwiches, salads, and antipastos, and will also have a wine bar. Come be a part of a growing, successful restaurant!
We are looking for a Chef to oversee the daily food operations of the restaurant. Will report directly to the Owner.
- Responsible for daily prep work, following recipes without variations
- Responsible for ordering food, supplies, uniforms, knife sharpening services, dishwashing services, etc.
- Ensure cooler rules are followed:
- Follow first-in, first-out inventory methods for all foods and supplies.
- Ensure all perishable items are date labeled in the cooler.
- Food is to be lifted at least 6” off cooler floor, ensuring department of health rules are followed
- Responsible for kitchen staff:
- Hire, train, evaluate, praise, discipline, and terminate staff
- Ensure tasks are completed in a timely manner and done correctly.
- Assign tasks to line staff.
- Cut staff when there is no work, saving on labor hours.
- Provide excellent leadership skills – rallying the team during heavy shifts, and resolving conflicts and getting the job done.
- Ensure proper clock ins/clock outs
- Responsible for smooth service
- Work the line during service, when needed.
- Ensure line is ready for day’s service.
- Ensure all food on line is fresh and is of high quality.
- Ensure proper portion control, including, but not limited to, deli meats, lettuce, and cheese.
- Ensure all food goes out of the kitchen correctly and is esthetically pleasing.
- Coordinate parties/catering:
- With the Front of House Manager, coordinate on all Event Orders for parties and banquets and Catering Orders, ensuring that product is purchased for the events, items are prepped ahead of time, and kitchen event staff is aware of what needs to be done for the event.
- Inspect all catering orders before they leave the kitchen.
- Work closely with Front of House Manager on all pertinent issues that effect Front of House Operations
- Ensure proper operation of all kitchen equipment. Is responsible to contact the right personnel if equipment is not working.
- May run errands picking up food or supplies.
- Ensure cleanliness of kitchen:
- Ensure sanitary guidelines are followed. Ensure kitchen is closed down properly each evening.
- Ensure heavy cleaning is completed, whether it is on a daily or weekly basis.
Education/Experience:
- High school diploma or equivalent required
- Previous experience as a Chef or Sous Chef required
- ServSafe certification required
- Must have a valid drivers license
- Must be able to work in a fast paced environment
Physical Requirements:
- Prolonged periods of standing and walking
- Must be able to lift, balance, and carry cases of food weighing up to 25 pounds.
