Position Overview
The Division of Developmental Disabilities is seeking to hire a Dietary Manager II for the Ludeman Developmental Center located in Park Forest, Illinois to serve as Food Services Manager to plan, organize, direct and evaluate the food services program. The incumbent will manage and direct central dietary operations and orders food and supplies. Supervises planning and preparation of diets and trains professional and para-professional staff regarding food preparation and food nutrition. Monitors clinical dietitians regarding menu preparation and nutritional reviews to ensure compliance with IDPA, IDPH, CMS, DHS and Center policies and procedures.
Job Responsibilities
1. Serves as Food Services Manager for the Ludeman Developmental Center.
2. Determines food service needs and orders food on a monthly basis to ensure adequate supplies of food and varieties of food are available with consideration to cultural and social needs of the individuals served.
3. Serves as a working supervisor.
4. Coordinates and directs proper maintenance and cleanliness of food service, preparation, and storage areas.
5. Teaches proper preparation and service of diets.
6. Supervises and monitors menu preparation with clinical dietitians to ensure individual nutritional status is reviewed quarterly and documents and records are completed accurately and on time.
7. Performs other duties as required or assigned which are reasonably within the scope of the duties above.
Minimum Qualifications
1. Requires knowledge, skill and mental development equivalent to completion of four years of college with courses in dietetics.
2. Requires two years of professional experience in a large-scale food service program.
3. Requires possession of a Food Service Sanitation Manager Certificate (FSSMC) issued by the Illinois Department of Public Health.
OR
Requires possession of a Certified Food Protection Manager (CFPM) certification from a program accredited by the American National Standards Institute (ANSI) Conference for Food Protection (CFP).
Preferred Qualifications
1. Three (3) years of professional experience in dietetics and food services management including nutritional values, costs and accounting for a public or private organization.
2. Two (2) years of professional experience using modern methods, materials and appliances used in large scale food preparation and service for a public or private organization.
3. Two (2) years of professional experience working with health and sanitary requirements applicable to a large-scale food service.
4. Two (2) years of professional experience planning and directing the preparation of modified diets and menus for a public or private organization.
5. One (1) year of professional experience developing and directing education and training programs to teach food and nutrition principles.
6. One (1) year of professional experience directing subordinates in the planning, preparing and serving general and special diets and other food services.

4. Requires the ability to pass the IDHS background check.
