The Position.
As the Kitchen Manager for Rally, you must be passionate about the craft of cooking with a deep regard for the ingredients and mastery of technique. The Rally Menu features made-from-scratch, global-inspired street food and house-made Neapolitan-style pizza. We have a deep appreciation for each ingredient we use and stay grounded to the familiar, while simultaneously pushing ourselves to stay ahead of food trends, but in our own unique style. The Kitchen Manager is responsible for supporting the Executive Chef in recipe development, staff training, scheduling, as well as product management and inventory.
What You'll Do:
- Responsible for AM opening of café and lunch/pizza service.
- Oversee ordering, receiving and data entry pertaining to all invoices received by the culinary team.
- Ensure that all food and products are consistently prepared by prep cooks according to Rally's recipes, portioning, cooking and serving standards.
- Responsible for handling, storing, and rotating all products properly and in accordance with company standards and local food code.
- Oversee and delegate food prep assignments as needed.
- Stock and maintain sufficient levels of food products to assure a smooth service period by utilizing company systems such as prep lists, par levels, and recipe yields

- Ensure that all equipment is kept clean and in excellent working condition through personal inspection and by following the restaurant's preventative maintenance programs.
- Assist Chef in counting and entering inventory by guidelines to produce a proper food cost.
- Train kitchen staff in cleanliness and sanitation practices.
- Maintain appropriate cleaning schedules for walls, hoods, other equipment, and food storage areas.
- Check and maintain proper food holding and refrigeration temperature control points.
To Be Successful in This Role, You'll:
- Have two or more years of experience in varied kitchen supervisory positions, including Kitchen Manager or Sous Chef.
- Have two or more years of experience working in a high-volume, scratch kitchen.
- Possess a working knowledge of managing budgets and culinary cost controls.
- Be knowledgeable about company software, including Microsoft Office, Toast, and scheduling systems.
- Have the ability to oversee a team of 15+ BOH team members.
- Must be able to stand for long periods of time while completing repetitive tasks and exert fast-paced mobility for up to 6 hours in length.
- Must have a sense of urgency.
- Must have a good sense of balance, be able to bend and kneel and have the ability to lift boxes and equipment frequently weighing up to 50 pounds.
