As a fine dining sous chef, your primary responsibility is to support the executive chef in managing the kitchen and ensuring that all dishes are prepared to the highest standard. Your job description may include, but not limited to, the following:

  • Menu planning and development: You will be expected to assist the executive chef in creating new menus that meet the restaurant's standards, appeal to customers, and keep up with current food trends.
  • Supervision of kitchen staff: You will be responsible for supervising and delegating tasks to other kitchen staff, including line cooks, prep cooks, and dishwashers. You must ensure that all staff members are working efficiently, following safety and sanitation protocols, and producing dishes that meet the restaurant's high standards.
  • Food preparation: You will be responsible for overseeing the preparation and plating of all dishes, ensuring that they meet the restaurant's standards in terms of taste, presentation, and timing.
  • Inventory and ordering: You will be responsible for managing inventory levels and ordering supplies as needed to ensure that the kitchen is fully stocked with fresh ingredients.
  • Training and development: You will be expected to train and develop the kitchen staff, ensuring that they have the skills and knowledge necessary to produce high-quality dishes and work efficiently.
  • Quality control: You will be responsible for ensuring that all dishes leaving the kitchen meet the restaurant's high standards for taste, presentation, and quality.
  • Cost control: You will be responsible for monitoring costs and ensuring that the kitchen operates within its budget. This may involve managing portion sizes, minimizing waste, and finding ways to reduce costs without compromising quality.
  • Safety and sanitation: You will be responsible for ensuring that the kitchen is kept clean and that all staff members are following safety and sanitation protocols at all times.
